Mexican Layered Casserole

15 Corn Tortillas
5 c Black Beans, drained
2 c salsa
3 c Nacho Cheese Sauce, uncooked
1 c enchilada sauce

Black Olives, sliced (for garnish)
Fresh tomatoes, diced (for garnish)

Line the bottom of a 9x13 casserole dish with 5 corn tortillas. Spread 2 ½ c black beans over tortillas; then spread 1 c salsa and 1 c cheese sauce on top. Repeat. For top layer lay down 5 corn tortillas, and pour on 1 c cheese sauce and 1 c enchilada sauce. Bake at 325 degrees for 40 minutes. Garnish with sliced olives and diced tomatoes.

Nacho Cheese Sauce

3 cups water
½ c raw cashews
2 ½ tsp salt
3 Tbsp cornstarch
1/3 c flour
2 Tbsp lemon juice
¾ cup nutritional yeast flakes
4 Tbsp canned pimentos

Blend until smooth.
